A Healthfilled Halloween

By Samantha Coffin, Health Coach and Office Manager

Halloween is right around the corner! This spooky holiday is usually filled with costumes, pumpkins and lots of sweets. What if this year, things could look a little different? What if your Halloween could be healthy?

In celebration of this spooky day, we have gathered together some of our favorite healthy treats!

Breakfast + Snacks:

First up, Monster pancakes! Take your favorite pancake recipe (we used Bob’s Red Mill Paleo Mix) and when you are mixing the wet ingredients, blend in some spinach. We used 1 cup of spinach for 1 cup of baking mix. The eyes are made out of vegan yogurt (we love Forager’s) and Enjoy Life Chocolate Chips that were frozen into these little shapes beforehand.

Keeping with the theme of monsters, how delicious is this treat? Using either the same eyes or any homemade edible eyes, nut butter ( we used Sunbutter) and sunflower seeds for teeth! If you don’t have candy eyes, can you use sliced bananas, blueberries and some toothpicks to make some too!

A really easy and fun snacktime treat is to use bananas, celery and some clementines to make these cute ghosts and pumpkins!

Hardboiled eggs are a great source of protein and a great source of ghostly fun! Check out this super easy and extremely nutritious ghost egg made by simply cutting out eyes and a spooooky mouth.

Main Courses:

Now that most of your day is filled with spooktacular ideas, let’s move on to the main courses!

Stuffed peppers are always delicious and we have a great blog sharing a recipe and all the reasons peppers are an amazing addition to your diet. Simply pick orange peppers and carve them like jack-o-lanterns to spook-ify this delightful dinner.

Now we may just have saved our favorite for last. Avocado toast is delicious, there is no denying that. But building your very own Frankenstein is pretty epic! We used sheets of nori for the stitches and hair and various veggies for facial features.

If you recreate any of these or have ideas of your own, please be sure to share them with us. Tag @carolina.holistic.health if you are sharing the photo on Instagram!
